Colourful, vibrant and packed full of flavour and texture the Heritage Tomato Salad at Heno & Rey has become a firm crowd favourite.
So, what is it about this salad that makes it so special? It’s all about the very small details, according to Director of Food and Beverage at InterContinental Perth City Centre, Andrew McGie.
Firstly, the Heritage Carabooda tomatoes are sourced from local Perth market gardens. These are halved and swirled in a bowl with some delicious Sherry Vinaigrette from Spain, adding the perfect acidity. Finely sliced shallots are then added lifting he flavour while roasted pine nuts bring a delicious toasty warmth to the dish. Dehydrated olive crumb is sprinkled on top, adding saltiness to deepen the flavour building complexity and texture. The olives used are from Eagle Vale in Boonanarring and are dehydrated in-house. Four generous heaps of whipped Goat’s Cheese are piped over the top of the salad with some fresh oregano, adding yet another taste of Spain.
