‘HANDS ACROSS THE LAND’ FUNDRAISER

InterContinental Hotels Group WA invites you to attend ‘Hands Across The Land’, a cocktail evening to raise relief funds for our fellow Australians in our country’s time of need.

Seven West Media’s Mark Readings as Master of Ceremonies

This event will feature the volunteered time and talent of eight of WA’s top restaurant Head Chef’s including;

Each Chef will present their own canapé creation for patrons to experience. See a sample of the menu below;
 

Chef Kim Brennan

  • Salmon Ora King Tartare
  • Pulled  Pork Butt slider
     

Chef Brendan Pratt

  • Uni donut, fermented tomato and anchovy XO
  • Kingfish, egg roll, taramasalata, tobikoo
     

Chef Josh Gray

Wood grilled occy, Kombu, coriander seed, lemon myrtle, togarashi.

Chef Stephen Watson

  • Abrolhos Island Octopus hand roll, yuzu kosho, nigiri sauce, finger lime, shiso, Daikon
  • Koji dry aged flat iron steak, black pudding, smoked tiny red beets
     

Chef Evan Hayter

  • Beef and chips – Karridale, 5 year old, grass fed, 100% black angus tartare made using eggs, pickled cucumber, onions, chives, buckwheat sprouts and finger lime all off the Certified Organic Arimia property
  • Honey and carrot tartlet – organic carrots, and Karri honey from the property, crunchy Moojepin Saltbush with a fermented native lime sherbet

  • Bahn & Co Chocolate Marquise, Crème Fraiche gel
